Tasting notes:

• Black currant and almond nose leads through to woodspice
• palate with peppercorn and liquorice
• Rich, cigar box finish
• Pork Tenderloin with raspberry sauce

Winemaking notes:

• Harvested early in the morning and cold soaked for 6 days at 11˚C
• Fermentation over 8 days with 5 punch downs a day
• 7 days post-ferment maceration

Oaking regime:
18 months in 225L oak barrels
French (90%), American (10%)
